FROZEN PLUM POP

Yields: 12 Pops

Comment:
On hot summer days, a frozen pop is a welcome treat.  Enjoy some family fun creating this creamy, natural fruit freezer pop dessert.

Ingredients:
1 pound assorted plums, pitted and finely chopped and divided (peel on)
¼ cup granulated sugar
1 tbsp corn syrup
¼ cup water
8 tsps fresh lime juice, divided
6 ounces plain yogurt
12 freezer pop molds

Method:
In a small saucepan, bring sugar, corn syrup and water to a boil, stirring occasionally to dissolve sugar. Remove from heat and allow to cool. Divide mixture evenly between two bowls. Working in batches and using a blender, purée ½ pound plums, 1 bowl cooled syrup and 4 teaspoons lime juice until smooth. Set aside. Repeat process for second batch using remaining plums, syrup and lime juice. In a large bowl, combine plum purée and yogurt, mixing gently until well blended.
